Brazil is the largest coffee growing country in the world, responsible for 30 percent of the coffee grown worldwide, of which about 74 percent is Arabica. One of the most remarkable coffee regions in Brazil is the Cerrado in the southwestern part of Minas Gerais. The Cerrado is a vast tropical and subtropical biome that includes forests, swamps, and grasslands. It covers more than 20 percent of Brazil and is the largest savannah in South America.

The name cerrado translates as closed, and the region remained that way until the 1960s, when farmers began cultivating the land. Over the years, grasslands have been transformed into agricultural and pasture land. Brazilian Cerrado coffee is grown at altitudes of 900-1,250 meters above sea level. Plantations are large, from 100 to 3,000 hectares, with enormous output. The homogeneous climate enables extensive control at all levels of production. In addition, the flat topography allows for the use of efficient mechanical harvesting. Most coffees are processed using natural and milled natural processes, which means that the coffee is dried with all or most of the fruit on the bean. This process adds sweet, fruity notes and creates a creamy body. The result is a balanced, nutty, chocolaty profile with low citric acidity and a smooth body – an all-round enjoyable cup that has become famous around the world.
